Andrew Martin was born in Canada to a French Canadian father and a Japanese mother. As a result, he developed a very open and enquiring attitude to different ways of life and, above all, food. On a culinary journey which began with flipping burgers and has seen him working in some of the world’s best restaurants from Canada, to Europe, and Japan, he is now the chef at the acclaimed restaurant 80/20. There he creates unusual dishes based on Thai cuisine which he sees as “rich and diverse….with a surprise around every corner”.
